This week's ingredient: the Longan

Longans are an Asian fruit clustered on a branch and looking like smoother lychees. Inside, their flesh is translucent white around a dark stone, accounting for its name 'dragon eyes' for the way the pit shows through the fruit.

It has a less pronounced flavor than a lychee and is used as often in soups and main course dishes as it is presented as a fruit to finish off a meal. It's in season the same time as the lychee and also found in Asian markets. In my view, it takes second place to the lychee. 

When it's dried, it's thought by the Chinese to relax you. The flesh turns almost black in color.
